摘要与影响
The chapter argues that integrating sustainability into digital food safety is crucial for developing resilient, low-carbon, and trustworthy food systems in the face of increasing demand, resource constraints, and climate-related risks. We position Industry 4.0 tools, AI/ML, IoT/smart sensors, big data analytics, and blockchain as dual-purpose enablers that simultaneously strengthen safety (real-time monitoring, rapid source attribution, predictive risk control) and deliver sustainability gains (reduced food loss/waste, lower energy and water use, ethical sourcing, and verifiable claims). Using a circular economy lens, we demonstrate how data-driven cold-chain management, precision agriculture, and digital traceability can prevent spoilage, optimise logistics, and valorise by-products. We also highlight critical trade-offs that limit scale and equity, including interoperability and standardisation gaps, cybersecurity and privacy risks, high upfront costs for SMEs, talent shortages, and potential digital divides. The chapter proposes a practical roadmap: embed privacy-by-design governance; adopt interoperable data/traceability standards and shared sustainability metrics; deploy blended finance and procurement levers to de-risk investment; and build capacity across supply chains. Aligning digital food safety with SDGs (notably 2, 3, and 12) can convert compliance into a competitive advantage while accelerating the transition to a safe, sustainable, and circular food economy.
