摘要与影响
Rye ( Secale cereale ) is a type of cereal grain that belongs to the grass family. Whole grain rye, high in dietary fiber and bioactive compounds, has gained popularity for its many health advantages, especially for diabetes, cancer prevention, weight management and metabolic health. Rye also possesses anti-inflammatory properties. According to research, eating rye can enhance insulin sensitivity and glycemic management, making it a beneficial dietary addition for people at risk of type 2 diabetes. Research has demonstrated that consuming whole grain rye bread might decrease postprandial insulin responses and raise levels of gut hormones, including peptide YY (PYY), which can improve satiety and decrease appetite, supporting weight management. A lower risk of colorectal cancer may be due to the high fiber content and particular bioactive chemicals in rye, which have been linked to enhanced gut health and a decrease in inflammation markers. Research revealed that rye-rich diets can positively change the composition of the gut microbiota, increasing the synthesis of short-chain fatty acids (SCFAs), which have preventive properties against metabolic disorders. Rye-based diets have been associated, in relation to refined grain products, with improved metabolic profiles and decreased body fat. These metabolic benefits come primarily from the fermentation of the indigestible carbohydrates of rye in the gut. Promoting rye as a functional food is necessary, emphasizing its potential for major improvements in public health, especially in the prevention of diseases linked to a certain lifestyle.
